Pre-heat the oven to 180°C (160°C with fan) Gas mark 4. Slice the red onion and courgette and tip on a baking tray. Crush the garlic over the vegetables, sprinkle with 1 tablespoon of the vegetable oil. Place in the bottom of the oven.

Halve the new potatoes and scatter on a baking tray, sprinkle with the remaining vegetable oil and place in the oven above the vegetables. Roast for 30 - 35 minutes.

Prepare the So Tender Tomato chicken according to the cooking instructions on pack.

Just before the Tomato chicken is cooked, remove the vegetables from the oven and sprinkle over the balsamic vinegar. Serve the roasted vegetables and potatoes with the Tomato chicken.

The recipe for the vegetables was loved by my husband and I. I stir fried the vegetables and added the garlic and balsamic vinegar towards the end. I parboiled the new potatoes and cut into wedges and then after draining added butter to the saucepan and continued to cook until they were golden brown. Lovely flavours!
