1 Pack Maggi® So Juicy® Tikka Masala Recipe Mix
1 Clove Garlic
1 Large Aubergine
1 Red Pepper
1 Large Onion
230g Tin Chopped Tomatoes
4 x 150g Skinless Chicken Breasts
Preheat the oven to 180°C (160°C fan) or Gas Mark 4. Prepare the So Juicy Chicken Tikka Masala according to the cooking instructions on pack.
20 minutes before the chicken is ready, steam or boil the rice according to the pack instructions. Meanwhile heat the oil in a large non-stick pan, over a high heat. Add the onion, garlic, red pepper and aubergine and stir-fry for 4 – 5 minutes.
Cover the vegetables with a lid and reduce the heat to low, cook for 10 minutes until soft. Serve the rice and stir-fried aubergine and red pepper with the Chicken Tikka Masala. Ensure that the chicken is fully cooked through and piping hot.
