  • 1 Red Chilli
  • 4 Skinless Chicken Breasts
  • 260g Uncooked Rice
  • 1 Pack Maggi® So Juicy® Hot Jalfrezi Recipe Mix
  • 1 Red Pepper, Chopped
  • 1 Medium Onion, Chopped
  • Handful Fresh Mint
  • 230g Tin Chopped Tomatoes
  • 1/2 Fresh Mango, Cubed
  • Bunch Fresh Coriander
  • 4 tbsp Low Fat Yogurt
  • 75g Cucumber, Finely Chopped
  • Juice of 1/2 Lemon
Step 1
Preheat the oven to 180°C (160°C fan) or Gas Mark 4. Prepare the So Juicy Jalfrezi chicken according to the cooking instructions on pack.
Step 2
Steam or boil the rice according to the pack instructions, 20 minutes before the Jalfrezi chicken is ready.
Step 3
In a small bowl, mix the yoghurt and cucumber. Roughly chop the mint and add to the yoghurt and cucumber mixture.
Step 4
In a separate bowl add the cubed mango. Finely chop the red chilli and fresh coriander, combine with the mango, along with the lemon juice.
Step 5
Serve the rice, cucumber raita and mango salsa with the Jalfrezi chicken.
