Put 200g self raising flour, 200g sugar, 200g baking spread, 4 eggs, 1 level tsp baking powder, zest of 1 lime and 25g of the Maggi Coconut Milk Powder into a large bowl. Beat with an electric mixer for 1-2 minutes until pale, light and fluffy.

Spoon the cake mixture into the tin and bake for about 50 minutes or until a skewer inserted into the centre of the cake comes out clean.

Mix the juice of 2 limes and 4tbsp caster sugar together until the sugar has dissolved. Gently poke holes into the top of the cake with a skewer and spoon the lime drizzle over the cake. Leave the cake to cool in the tin.

Make the icing
Start timer
Put 275g icing sugar, 50g baking spread, 50g cream cheese, the remaining 25g Maggi Coconut Milk Powder and the zest of 1 lime into a large bowl and beat with an electric hand mixer until soft and creamy. Spread the icing over the cooled cake and top with the fresh mango, toasted coconut and lime zest strands if using.

I added prawns squids and crab meat for simple packet of Maggie chicken soup. And served on top of salads and side of chilli oil with Maggie curry flavours.
