Start timer
Cut the cauliflower into small florets. Cook the cauliflower for 3-4 minutes in boiling water, then drain. Tip the florets into a bowl and drizzle half the oil over. Sprinkle over the Magic ae Masala spice and air fry at 200C for about 10-12 minutes (or you can roast in a hot oven or pan fry if you prefer) until the florets are slightly charred or browned.

While the cauliflower cooks, fry the chopped onion for 5-8 minutes in the remaining oil until softened and turning brown, stirring often (don't rush it!). Add the garlic and ginger and fry for a further minute.

Add the cumin, coriander and chilli to the onions and fry for another minute before adding the tomato passata. Cover and simmer for 5 minutes until the curry has slightly thickened. Sprinkle in the fenugreek leaves and sugar stir and then add the drained chickpeas and stir.

Start timer
Stir most of the cream through the curry and pour into the serving dish. Swirl the remaining cream over the top and place the cauliflower on top. Finish with coriander leaves and toasted cashews, if you like! Serve with rice or naan.

I added prawns squids and crab meat for simple packet of Maggie chicken soup. And served on top of salads and side of chilli oil with Maggie curry flavours.
